Happy Earth Day all! I feel greener already today because I am using my SIGG water bottle and I carpooled to work :) It's the little things that add up, right?
I actually prepared my breakfast for today last night. It was so awesome to be able to grab and go. On the the Jump Menu this AM was "Egg Foo Young", a slice of toast, a tangerine and 8 oz of FF milk. Here is how I put it all together to make a fabulous Wednesday morning breakfast!
Saute the veggies in nonstick olive oil spray:
Add in the canadian bacon or your favorite meat/meat substitute of choice:
Add in 1 egg plus 1/2 cup liquid egg whites cooking until the egg is set:
Fold in half and top with scallions, cilantro & low sodium soy sauce:
This was so tasty and veggie packed - not bad for less than 200 calories. I really liked the addition of the cilantro and the soy sauce. I definitely will find a way to use this combo again.
For sides, I had 1 slice of Ezekial Bread with 2 Cuties:
And I used my 8 oz of Fat Free Milk to make a fabulous iced coffee. I will probably make another since I only used 1/2 my milk.

Your "egg fu young" looks really good. I've never thought of putting sprouts in an omelette!

ReplyDeleteKirwin ~ It was really yummie and I LOVED getting this huge omelet for so little calories. The ENER-G Eggs are Vegan. I have not tried them because I wasn't sure what they were made of (chemicals or not). Do tell if you try them.
