Food Swaps are so fun!

My interval run today was awesome - it has fianlly cooled down into the 70's and was a little breezy. I ended up going for 45 minutes before heading back in to make up a surprisingly delicious lunch.

I have to start out by saying that I may have just tried the BEST DRESSING I've ever had in my life today. Ok, I know it's not Annie's Naturals and it's a competitor, but, seriously, Annie's doesn't have this flavor and this flavor seriously rocks. It's Newman's Own Lite Lime Vinaigrette - you can check out the specs by clicking here. It does remind me a little of the Annie's Naturals Baja Lime Marinade - it has a lime/coconutty taste to me. I used it to make my first ever Tuna Melt.

6 oz Albacore water packed tuna drained
Sprinkling of garlic salt, dillweed & freshly ground pepper
2 Tbsp Newman's Own Lite Lime Vinaigrette
1 slice TJ's Light Havarti Cheese
Thomas Double Fiber English Muffin, Toasted

I didn't have access to our broiler today so I just nuked it in the microwave for one minute. Asbolutely delicious and I would actually make this again.

No my morning snack I am a bit more skeptical over. I had 2 Tbsp of the BL Peanutty Spread with 1 cup of Jicama.

To make the Peanutty Spread you blend together the following:

9 oz soft tofu
1/3 c natural peanut butter
4 tsp honey
2 tsp lime juice
Water as needed to get it to blend

The flavor - well, you don't really even taste the tofu - it tastes just like a thick and lighter PB. It wasn't bad, but, I haven't made my decision that I am in love with this snack yet.

MY WAY COOL NEWS OF THE DAY.....I LOVE, LOVE, LOVE Lundberg Products and I especially LOVE them when they are free!!! Our company did an organic food trade with them and here is what I picked to take home. Too bad I have to wait 26 days to have them - that is if The Husband doesn't eat them all first. The BBQ is my absolute favorite flavor followed by the Lime then the Sea Salt.....All are Gluten Free and Wheat Free and some flavors (like Wasabi) are VEGAN.

I have a "slight" confession to make. I may have sampled just a couple open bags in the breakroom....good thing I doubled my workout running time today so I burned off those extra calories :D

Tonight I am making one of my favorite low cal recipes of all time - I can't wait - see you all then!

  1. Oh my, that tuna melt looks awesome! Great idea to mix it with the dressing instead of mayo!

    I heart those Rice Chips. My daughter used to eat them all the time due to food allergies and I found that I really enjoyed them too!

    Never met a chip a didn't like ;)

  2. Marisa ~ I couldn't agree more. I haven't met a chip I do not like, but, Rice Chips are soooo incredibly addictive for me - you know the whole WW term, red light foo....Yup that would be me and Rice chips. Thanks for the blog kudos - I LOVE your blog too.
